Cheesecake with dew

A delicious cheesecake with a crispy base and delicate foam topped with droplets of golden dew. It melts in your mouth and quickly disappears from the plate.

Ingredients:
shortcrust bottom:

  • 200 g flour
  • 100 g butter
  • 100 g powdered sugar
  • 2 egg yolks
  • 1 tablespoon of cream
  • 2 teaspoons of baking powder

cheese mass:

  • 1.20 kg white cheese (semi-fat)
  • 4 egg yolks
  • 2 whole eggs
  • 3/4 cup of oil
  • 3/4 cup of milk
  • 1 cup of sugar
  • 2 vanilla sugars (2 x 16 g)
  • 2 cream puddings (2 x 40 g)
  • grated orange or lemon peel
  • 1 handful of raisins

foam:

  • 6 egg whites
  • 1 cup of sugar
  • a pinch of salt
